Jacques Flecher : Chef

Jacques starts his career in France before traveling Europe. His experience brought him from Brasserie to Gastronomic restaurant as the « Small Luxury Hotel » in Homewood Park, 1 Michelin Star.

In 1999, he decides to go and live in Saint-Barthelemy where he works for the restaurant and caterer « La route des Boucaniers » and then the hotel « Guanahani & Spa » as Head chef at the restaurant « Indigo ».

Stronger of his experiences, in 2013, he creates with his two associates, Carole and Jimmy, the company « Villa Chef St Barth » to share his culinary knowledges.

Child, Jimmy is fascinated by the culinary art and starts a French catering school at the age of fifteen. His degree passed, he is attracted by the “Fine Cuisine” and move to Paris, then Courchevel in the French Alps, where he works for the well-known two Michelin starts Hotel & restaurant « Le Chabichou ». He continues to learn with the best chefs in the world and don’t forget the most important: his passion for food!

He decides to leave France for England to discover new methods and to improve his knowledges, and Jimmy finds a chef position at the «Gilpin Lodge», 1 Michelin star establishment.

In 2007, a “Sous Chef” position waits for him in Saint-Barthelemy, at the Hotel « Guanahani & Spa », where he starts to work in collaboration with Jacques.

To put in practice and share his knowledges and passion that hasn’t stop growing with people, it is in 2013, that Jimmy starts the company « Villa Chef St Barth ».

Carole Huntz : Butler

Carole

 

After a school in hospitality & catering in Toulouse, Carole leaves for Scotland to learn international cuisine and service rules in restaurants.

In 2006, she obtains an international scholarship and cross the world for Asia, Kuala Lumpur in Malaysia, where she passed her catering & tourism degree. Carole decides to improve her career, with cultural and professional knowledges, in Asian countries and get a position as “opening team” of the 5 stars and prestigious « St Regis » hotel, in Singapore. She spends two years there as a “F&B event planner” and “catering manager“.

Her road with Starwood brand continues to French Polynesia, in Bora Bora, where she works in collaboration with Jean-Georges Vongerichten and finally to Saint-Barthelemy. It is in 2013, after two years at the hotel « Guanahani & Spa » that Carole, Jacques and Jimmy decide to create their own catering company « Villa Chef St Barth ».
